I literally lazed around the whole day on Sunday!!!! Lazy de me.
Had an 'AH-HA' moment when I saw that there was loads of white bread in the fridge.

I had cravings for some bread pudding for like ages! So after dinner, I had Bi driving me to Hua Ho to get the ingredients. There was some bananas lying around in the kitchen as well so I had decided to make banana bread pudding!
Ingredients:
Very ripe bananas around 4-5 pieces. If you love bananas, just add more.
6 eggs
4 cups half and half. (I had to google this. I had known that this will not be available in Brunei so I made some substitution. Equal parts of whole milk and whipping cream)
1 teaspoon of cinnamon (without sugar)
1/2 stick of butter unsalted
1 teaspoon nutmeg (Hua Ho dun have this spice. I got it at Le apple)
3/4 cups sugar
Slice all the bananas . Melt abit of butter and add in 2 table spoon of brown sugar. Add in the bananas and wait until it browns.
Melt the rest of the butter in the oven. At the same time mix all ingredients together. Then take out the butter and mix in the mixture. Cut the bread into the size that you like. Dip the bread into the mixture. Make sure the bread is thoroughly soaked. Lined it up in the deep tray. I alternate between the bread layer and the banana. I did 2 layers of bread and 2 layers of bananas. If there is any mixture left, just pout it into the tray.
Put the tray into the pre heated oven. I blasted it at full heat for around 20 minutes or so. To test whether it is ready, insert a chopstick in the middle and if it comes out clean then its ready!
And voila!!!!! My first attempt at banana bread pudding.....
It was a tad too sweet. (For me la) And I think not soft enough. But overall, it was good! I think I should have cooked the custard sauce for the pudding. Oh well, there is always next time.
